1. When a cake recipe includes baking soda (not baking powder), does it always have to include another acidic ingredient like buttermilk? 

2. I&#039;ve noticed all carrot and date cakes are made with oil and not butter, why&#039;s that?

3. As a standard cake measurement for moist cakes, does the proportion of butter always equals flour?
