		<description><![CDATA[Elissa, I was looking for the perfect cookie to bring in to work with the limited ingredients we had in the house (including three bags of coconut, strangely enough).... and this was it! Instead of 12 large macaroons, I used my tablespoon to make smaller, 2-bite-sized macaroons. This recipe yielded approximately 24 of those (actually, 22, because I found myself eating so much of the coconut mix!). Can&#039;t wait to bring them in tomorrow! 
P.S. My office loved your buttermilk poundcake :)]]></description>
