And, like you, I have yet to master the art of pancake making! I don’t know…the griddle is too hot or not hot enough? I think I’m usually ok on the batter but it’s hard to tell…they never quite come out right. I haven’t tried them in a while now…maybe I’ll give it another go sometime soon…

They always turn out light and fluffy, my family loves ‘em. The trick is to not over-beat. Honestly, thats all there is to it. Even if it looks like you have clumps of flour thats unmixed or melted butter thats sitting on top, DONT OVER-BEAT IT. That really seems to be the downfall of a good pancake.

Also, I suggest trying a buttermilk pancake recipe. They are delicious!
